SUMMARY:Chinese Food Festival 2018
DESCRIPTION:Chinese Food Festival will return to Potters Field Park on Friday August 31st to Sunday September 2nd and this year is themed around the famous night markets of China known as yè shì\, but with the benefit of all-day opening hours. \nIn the shadow of Tower Bridge over 20 vendors will serve around one hundred authentic market dishes representing seven individual provinces from across China. \nDishes will include Wuhan Chilli Oil Braised Crayfish (from Wuhan Midnight Market in Central China)\, Rose Ice Jelly made with organic Yunnan roses and garnished with crunchy peanuts\, dried raisins\, and dried hawthorn (from Yunnan in South China)\, Xiaomian noodles with their unique spicy taste of chilli oil often made to a secret recipe (from Chongqing in South West China) and intensely sweet and charred traditional Cantonese Char Sui (from Hong Kong in South East China). The Shanxi Province will be represented by a dedicated area with multiple vendors serving signature Shanxi cuisine\, such as Xi’an beef burgers\, Xi’an cold noodles and hand-pulled noodles with Qishan sauce and pork mince. Visitors will also be able to taste the sweet and savoury treasures of Taiwan with three vendors from the island showcasing snacks\, desserts and their famous fruit teas. \nLee Kum Kee Chinese Kitchen is offering free masterclasses throughout the festival in association with School of Wok teaching the market classic BBQ chicken bao with pickled vegetables and a Cobra and Snow Beer bar and JiangXiaoBai Baiju bar will be serving drinks until late adding to this spectacular celebration and unique opportunity for visitors to experience the diversity of Chinese food.

DESCRIPTION:Patara restaurants are delighted to announce their collaboration with Nawamin Pinpathomrat\, best known as\, and thanks to the Tourism Authority of Thailand (TAT)\, Thai Airways and Anantara Hotels all who attend can enter a competition to win a 5-night city and beach holiday for two to Thailand. \nThis September Nawamin will take over two dinners services at Patara Greek Street for with a four-course menu of dishes showcasing flavours found in the cooking of traditional Thai homes; Nawamin will create three dishes and Patara will provide the fourth dish. \nSupported by TAT the competition can only be entered by those attending the dinner on one of the two dates. Diners are required to take images from the evening\, tag with #PataraNawamin and the best photo\, as judged by Nawamin\, will be awarded with Thai Airways tickets with three nights in Bangkok at the Anantara Riverside followed by four nights at the Anantara Hua Hin\, with daily breakfast\, one dinner and traditional Thai cooking class included. \nNawamin’s greatest cooking influence is his grandma and the menu begins with ‘Grandma’s Garden’\, named in her honour this dish is a combination of sliced lemongrass beef\, burnt aubergine salad\, spicy coconut cream dressing and served with an aromatic Thai herb ‘garden’. The ingredients are inspired from the two years Nawamin lived with his grandma\, her home being almost self-sufficient they hardly needed to go shopping for ingredients. \nDiners will have the opportunity to taste Nawamin’s opening dish from his first appearance on MasterChef\, his Southern-style Crab Yellow Curry. This dish is made with sweet blue crab meat\, betel leaves\, finished with Thai basil and served with garlic rice noodles. This recipe was taught to Nawamin by his grandma and is a classic dish from her home of Pattalung\, a very peaceful province in the south of Thailand\, benefiting from having both the Thai bay and Andaman Sea to provide locals fresh fish and seafood. \nThe dessert is a vibrant ‘Jewel Pot’ made with glutinous rice ball\, red water chestnut\, yellow jackfruit\, blue tapioca and palm sugar custard. This combination is a Thai favourite across all ages loved as a street snack bought on way home from school. Nawamin will elevate presentation in his flamboyant style as witnessed on television with dishes such as his coconut-flavoured swan lake dish with blue custard. \nPatara London is adding a second main dish to the menu showcasing the unique flavour of Thai herbs and spices often found in homecooking. Their Grilled Chicken Nam-Jim-Jaew comes from a family secret recipe using turmeric and coriander to marinate corn-fed chicken. The chicken is served with a tangy & spicy Thai dipping sauce\, papaya salad and sticky rice rolls and respectfully compliments Nawamin’s considered menu inspired by memories from his family and heritage

DESCRIPTION:Consumers are increasingly seeking food experiences that are ‘culturally authentic’\, yet defining authenticity is fraught with difficulty.\nWhat constitutes cultural authenticity with respect to Chinese cuisine? Do accepted notions of authenticity change over time in response to international influence and changing tastes? Who should we accept as credible ambassadors of authentic Chinese Culinary Culture?\nIn this session panellists will explore cultural authenticity with respect to Chinese cuisine. The event comes at a time when supposed ‘cultural appropriation’ of national cuisines and culinary traditions is receiving national attention. \nThis event is sponsored by Lee Kum Kee and organised in partnership with The Oxford Cultural Collective. We thank Paul Bloomfield and the China Institute for their support. \nFuchsia Dunlop is an award-winning cook and food writer specializing in Chinese cuisine. She is the author of five books about Chinese food and gastronomy\, her latest being Shark’s Fin and Sichuan Pepper: A Sweet-Sour Memoir of Eating in China. Fuchsia grew up in Oxford and studied at Cambridge University\, Sichuan University and the School of Oriental and African Studies (SOAS) in London. Her writing has appeared in publications including the Financial Times\, the New Yorker\, Lucky Peach\, Gourmet and Saveur and she makes regular appearances as a Chinese food expert on radio and TV. \n \nMukta Das lived and studied in China and across East Asia before returning to graduate school to research Chinese culinary culture. Mukta publishes in food-related journals and works closely with Andrew Wong on recipe and menu construction. \nJeremy Chan is the UK-born\, American-educated\, Chinese-Canadian chef who co-owns Ikoyi\, a Michelin-starred\, West African inspired restaurant in central London. Initially pursuing a career in finance\, he was soon eager to work in a more creative\, practical environment. He trained in renowned restaurants including Noma\, Hibiscus and Dinner by Heston Blumenthal\, before a chance meeting with Nigerian board friend Iré Hassan-Odukakale\, sparked an interest in West African ingredients. Chan’s distinctive style is unrestrained by geographic borders. \n  \n \n  \nAndrew Wong was immersed in his family’s restaurants since childhood. Despite studying Chemistry at Oxford and Anthropology at LSE Andrew was tempted back into the family business. After training as a chef he was technically accomplished\, but dissatisfied with his knowledge of true Chinese cuisine\, so he set out on a working tour of China which included a period studying at the Sichuan Culinary Institute. Bursting with inspiration from his travels and fascinated by how food in China differed so dramatically according to region and culture\, Andrew opened A. Wong in 2012 with his wife Nathalie. Andrew opened his second restaurant\, Kym’s\, at Bloomberg Arcade in 2018.
